Compliance and certification
Staff receive a Kasorb certificate of completion, valid for two years. It's awareness training for staff who support people with swallowing difficulties or prepare their food; assessing swallowing and setting diets stay with the speech and language therapist. It isn't a regulated qualification.

- Three hours, with a short break.
- Certificates are emailed the next day.
What the course covers

- Conditions associated with dysphagia
- The role of speech and language therapy in setting individual diets
- Texture-modified diets and the IDDSI levels
- Physical and emotional care, and mealtime support
- The psychological impact on the person, their family and carers
- The protocol if someone chokes
Who needs this training
Anyone who supports people with swallowing difficulties, or prepares their food and drink:
- Care and support workers in dementia, stroke, learning disability and older people's care
- Nurses, senior carers and team leaders
- Kitchen and catering staff who prepare texture-modified food
- Residential and nursing homes, supported living and home care
We recommend at least Level 1 literacy and numeracy.
What the law says
In England, CQC's Regulation 14 (meeting nutritional and hydration needs) expects people to get food and drink that meets their needs, and Regulation 12 (safe care and treatment) expects providers to assess and reduce risks to people's health, including the risk of choking. Care regulators in Scotland, Wales and Northern Ireland set similar expectations.
The IDDSI framework is widely used in the UK to describe texture-modified food and thickened drinks, so staff and kitchen teams who understand the levels — and follow each person's prescribed diet exactly — are central to safe mealtimes.
How we assess learning
Your trainer tests understanding throughout the session through questions and discussion.
Your trainer
Your trainer has used these skills for real, and teaches dysphagia care in terms of the people your staff support — from mealtime support on the floor to what the kitchen needs to get right.
Logistics
- Room: seating for up to 12, horseshoe or classroom seating — what matters is clear floor space, with a projector screen or blank wall
- The trainer brings: projector, laptop, flipchart and all general training equipment
- Group size: up to 12 per session, on-site or live online
- Timing: morning 09:30–12:30 or afternoon 13:30–16:30; staff arrive 15 minutes early
- Access: the trainer needs the room 45 minutes before the start
- Anywhere in the UK, or live online
- Live online: a quiet space and a device with camera and audio for each person joining — ideally one device each, and never more than two people per device
- More dates online: live online often has more dates available, so it's worth asking if you need training sooner or have people across several locations
- Literacy: we recommend at least Level 1 literacy and numeracy
Cost explained
£495+VAT for the day. It's a day rate: one trainer, one day, the same price for one half-day session or two. Run two sessions, morning and afternoon, and train up to 24 staff — care and kitchen teams — while the rest of the team covers the floor.
More than 24 to train? Book another day at the same flat rate. Several sites? Book each site through our booking site at no extra cost, or we'll arrange them for a £100+VAT admin fee.
Frequently asked questions
Does it cover IDDSI?
Yes — the International Dysphagia Diet Standardisation Initiative (IDDSI) levels used to describe texture-modified food and thickened drinks.
Should kitchen staff attend?
Yes. They prepare the modified diets, so they need the same understanding as care staff. Two sessions in one day make it easier to fit everyone in.
Will staff be able to assess swallowing?
No. A speech and language therapist assesses swallowing and sets each person's diet. The course teaches staff to understand those recommendations and follow them exactly.
Does it replace choking or first aid training?
No. It covers the choking protocol in this context. For hands-on CPR and choking practice, staff need Basic Life Support or our Choking & LifeVac course.
Can it be done online?
Yes, live with a trainer, for up to 12 staff per session — not a recorded module.
Can we train more than 12?
Yes. Run two sessions in one day for the same £495+VAT — up to 24 staff.
How quickly can you come?
We confirm bookings within 48 hours, and we recommend booking at least four weeks in advance to secure your preferred date. If you need something sooner, just ask.
